Herbal Wedgies

(you can make own variations with other meats herbs, chopped vegetables & cheeses)

6 English Muffins, split in half - toasted
½ C thinly sliced green/purple onion
1 ½ C shredded cheddar/jalapeno cheese
½ C mayonnaise (lite Hellman's)
1 C chopped cooked chicken
2 Tbsp chopped jalapeno peppers
2 Tbsp chopped fresh Turkish oregano (spicy)
¼ tsp garlic powder
½ tsp cumin
¼ tsp chipolte powder, or to taste
1 C chopped black olives (optional)

Combine ingredients and spread on toasted English Muffins.

Bake at 375oF for 15 min. or broil until hot & bubbly. Cut in 1/4ths, or serve open face as a sandwich - serve hot or room temp.

* Dill, lemon, garlic, chives goes well with fish or fake sea food.
* Thyme, sage, rosemary, swiss cheese goes well with ham
* Oregano, Italian seasoning mix, sun dried tomatoes & pepperoni
* Lime juice, curry, grated ginger and cilantro,chicken, almonds, and pineapple, serrano peppers for bite.
