Chop and sauté 1 small onion, half green bell pepper, half red bell pepper, 1 clove garlic and one half cup mushrooms. Set aside. Chop 2 med. tomatoes, squeeze juice and discard juice. Add 2/3 cups bread crumbs, ˝ cup basil tomato feta cheese, 2/3 cups pesto, 2 egg whites. Salt and pepper to taste. Mix together all ingredients.

Preheat oven to 300oF degrees. Please in mini phyllo shells. Bake approximately 10-15 minutes. Serve warm and let the flavor savor in your mouth!

Plate was decorated with tomato that had center hollowed out to use as vase and basil with flower heads inserted into center.
